Cacao Nibs, Roasted Cocoa Pieces

Cacao nibs are the pure heart and soul of every cocoa bean. After the beans are roasted whole, they are broken into small pieces. With great care and attention, all the shells are removed to reveal a very pure and flavorful ingredient: NIBS, the cocoa pieces from Callebaut.

With their intense roasted cocoa taste and crunchy texture, nibs are an excellent ingredient for adding texture to desserts or for creating unique culinary preparations.

Sprinkle them on pastries for an extra-intense cocoa boost. Add finely crushed nibs to caramel fillings to create a delightful nougat. Or mix them into praline chocolate creams for added flavor and surprising texture.

Cocoa nibs can also be baked into rolls, cookies, or cakes, or pressed onto desserts, ice cream, and made-to-order drinks to give them a tasty crunch and an artisanal finish.

Callebaut Chefs recommend avoiding mixing nibs into creamy bases or ganache, as cocoa pieces tend to absorb moisture and may become soft.
