Pectina este un Aditiv alimentar cu rol de emulgator, stabilizator si agent de ingrosare, prezent in mod natural in fructe, in special in mere, portocale si gutui.
Pentru uz industrial, pectinele se obtin din mere si portocale.
Produsul se prezinta sub forma de pulbere, fara gust.
Utilizare:
Se utilizeaza conform cantitatilor prevazute de retete, in special in produse pe baza de fructe, pentru ingrosare si gelifiere: sucuri concentrate, nectaruri, gemuri, jeleuri, marmelade.
Se utilizeaza si ca solvent pentru alti aditivi alimentari.
Observatii:
- Gelificare lenta.
- Efect final la 24h.
- Geluri ferme, strălucitoare și elastice.
- Termoreversibil.
- Congelabil.
Dozare:
Glazurat sau gelificat moale, glazura neutra: 0,5-1%
Glazurat sau gelificat rigid, jeleuri: 1,5-2%
Creme: 1,5-2%
Ingrediente: Agent de ingroșare: pectina amidata (E440ii), stabilizator: difosfat disodic (E450i), dextroza, acid: fosfat tricalcic (E341iii).
Poate contine urme de: Soia, Oua, Arahide, Lapte, nuci, seminte de susan, Telina, Mustar, Sulfiti
