Cacao Barry Zephyr 34% White Chocolate.


Zephyr genuine white chocolate is mildly sweet, with a creamy texture and a rich whole-milk taste, made with 100% pure cocoa butter.

Premium white chocolate Zephyr is made from West African Forastero cocoa beans, giving it a delicate texture and a pronounced milky flavour.

Zephyr white chocolate is perfect for moulding chocolate shapes, dipping or coating confectionery and pastry creations, including creams, mousses and all kinds of decorations.

This white chocolate is also ideal as a base for coloured glazes. Glazes can be coloured with oil-soluble colourings.

The chocolate callets weigh approximately 2 g each, making dosing more practical, melting faster and tempering easier.

Recommendations for quick and easy tempering:
In a tempering machine or in an oven, melt the chocolate to 40°C. Once melted, stir in about 1/3 unmelted chocolate.

Mix with a spatula.

This will reduce the temperature to 26°C, which is the ideal temperature for pre-crystallisation. During use, the chocolate should be kept at 28°C throughout the process.

Using the microwave: follow the same method in a suitable container. This is a quick technique, but it requires close attention during melting, as the chocolate can burn (caramelise) very quickly.

 

Zephyr white chocolate pairs beautifully with curry, fleur de sel, basil, anise, saffron, mint, coconut, passion fruit, sour cherries, green apple, grapefruit, red apple, gin, brandy, champagne, caramel, pistachio, balsamic vinegar, creamy cheeses, Earl Grey tea, rose and truffles.

At temperatures above 26°C, the cocoa butter in chocolate products may begin to melt and recrystallize, forming streaks or white spots on the surface of the chocolate. This phenomenon is known as “fat bloom.” Although its appearance may not be perfect, bloomed chocolate is safe to consume and can be used in recipes.

Chocolate drops may also soften and stick together, causing the chocolate to arrive in clumps. The product remains safe for consumption and suitable for use in recipes.
