Crema pentru tort cu cacao – Azabache, Chocovic este o crema profesionala din ciocolata neagra compound, gata de utilizat, potrivita atat pentru umplerea, cat si pentru acoperirea torturilor si prajiturilor. Are o textura fina, luciu placut si fluiditate excelenta (5 picaturi), fiind ideala pentru torturi mousse, Sacher, produse de patiserie, trufe sau praline.
Incalziti produsul la 35–45°C in cuptorul cu microunde (600–850W). Amestecati bine pana la omogenizare completa. Daca apare separarea grasimilor, amestecati energic pana cand crema devine uniforma.
Se incalzesc smantana, apa, zaharul si siropul de glucoza pana la punctul de fierbere. Dupa racire la 35–45°C, se adauga ciocolata Neagra si crema Azabache. Se amesteca bine cu un blender vertical. Se pastreaza la frigider sau congelator. Inainte de aplicare se reincalzeste la 35–45°C si se omogenizeaza.
Zahar, cacao pudra cu continut redus de grasime (24,5%), grasimi vegetale complet hidrogenate (cocos, palmier) in proportii variabile, grasimi vegetale (floarea-soarelui), emulgator: lecitina de Soia, aroma: vanilina.
Poate contine urme de: lapte, nuci, alune.
